lemon1Current favorite snack- “no bake” lemon coconut bites. Super easy to make (obviously), gluten-free, vegan and most importantly so damn good. I ate at least four after shooting this post.


1 1/2 cups almond flour

1 1/2 cups dried, shredded unsweetened coconut

1/3 cup coconut flour

1 1/2 teaspoons stevia powder (mixed with a bit of water)

2 teaspoons vanilla extract

1/4 cup lemon juice

1 tablespoon lemon zest

1/3 cup coconut oil

pinch of salt


Mix almond flour, shredded coconut, coconut flour and a pinch of salt. In a separate bowl, mix stevia powder and water, vanilla extract, lemon juice and lemon zest. Using an electric mixer, slowly stream wet ingredients into dry ingredients. Once combined, stream in melted coconut oil. Use a tablespoon to form dough into balls. Place cookies in fridge and wait at least 1-1.5 hours for dough to set.

    These look really tasty. I love coconut and have a sweet tooth. Have to keep that recipe in mind if I ever stumble upon almond and coconut flour around here.

    Are nut flours available in the US? I eat something like these on a daily basis but I’m living in Brazil (was your recent journey so inspiring? :) you can get stuff like this pretty much on every corner just like acai or guaravita)
    They are really good especially during summer heat

    Karla, I’ve been loving all the food posts you’ve been sharing! However I gave these a go last night and I’m wondering if there’s been a mistake with the dry-to-wet ingredients ratio, because I ended up with a very sandy mixture that crumbled in my hands. I did, however, substitute the almond flour with all-purpose flour. Was that the problem? Please help. These look so delicious.
